Connecting flights

I have always thought connecting flights aren't possible but if you look into the maps of some Airlines it seems that the have connecting flights (London-Rome-Madrid-London).
Does somebody knows how this works.

When opening a new route, there is an option to select a second destination. Scroll down after you have selected the first destination.
