I struggle finding decent Cargo routes..... By all means Memphis should be very high cargo demand but it feels just mediocre at best... What am I missing?

The cargo demand is based on the new "City Based Demand" system. That basically means the bigger the city (or the more inhabitants the region has) the more demand there is. Another important aspect is if the country (USA in this case) is a leading economy. They certainly are, but Memphis is a rather small place in the middle of nowhere compared to big metropolitan areas around the east coast or west coast. Demand does not necessarily reflect real-world numbers/phenomena. You would find way more demand in let's say the NY area, LA area, Chicago or maybe Florida...in short...places where you find tons of people living in a rather confined space.

As a result, demand is based on the economy of the area surrounding the airport, and not decisions made by certain companies to base operations in Memphis in real life.
