I just repaired a used plane I purchased to 100% conditions and now 8 days later in game time the condition is down to 95%....Is there a way to slow this down or do i just have to keep repairing the condition every time in gets into the 80 percentile.

As long as you stay above 90% you have nothing to worry about.  Condition will constantly go down and normal maintenance will make it go up.  It is not uncommon to have condition around 90% going into a C-check.

i'll go and say anything over 80% and you should be fine. once you get into the 70s and below expect a lot of mx delays. but generally 90%+ is normal. No airframe will ever be 100% quality.

Even in the 80% right now I am experiencing Technical Cancellations...Do I just condition the plane back into the 90 percentile to get rid of it?

90%+ is ideal, but as tony said 80% or better is acceptable.  You will *always* have technical cancellations--it's just the nature of the airline industry.  As long as your cancellations stay less than 2% you have nothing to worry about.
