Does it matter how many seats you have in a plane even if they're the same type? Like say I had 6 standard economy seats in a 737 compared to a 737 with 149 standard economy seats. Do passengers care?

The passengers with seats will not care, but the passengers left standing in the terminal building will care.

Yes, of course they care, the max number of passengers on the aircraft is determined by the number of available seats (and some other factors too like demand etc ...)
