I haven't flown Condor, but I did do a flight on Iberia AMS-MAD in April of 2008.  From a service perspective, I found it to be interesting to say the least - they handed out your choice of a variety of free newspapers at the start of the flight, but then they charged for drinks/snacks.  Towards the end of the flight, the attendants made a pass with a perfume/other stuff cart to try to sell a few things.  That level of service would likely best describe what you'll get to make it to MAD for your connection - their longhaul service is different but I dont' know how.  Check out flyertalk.com for better info...

From a safety perspective, if they're permitted to fly in the EU, they pass the stringent saftey requirements imposed upon them by the EU, thus its not something I typically consider when choosing between major airlines.
