I know that I have seen somewhere on here what conversions are available for what aircraft—as in can a 757-200 be converted to a 757PF? Can someone steer me? I have looked and looked.

The aircraft information (and other similar pages in the interface) will show the available conversions, once they are launched.

You can convert the 757-200 and order the 757-200F from factory.
