I know its been discussed sone time back, but does anyone have any recommendation for designing a livery on a Mac (best programme/aircraft template source?)

Well, I made mine taking a Sketchup model that I modified and included elements from autocad, illustrator and photoshop. Everything was then reworked on photoshop.
But you can achieve a very good result using some license-free program. It all depends on the result you're expecting (complete 3D, modified pic, drawing, etc.).

Gimp for design and Jetabout for templates but it takes some time and effort to get a good result

If you're looking for something free, I use Pixlr Editor. Not nearly as good as Photoshop, but passable.
