How come that turn-around time is 70min on a 757 with 189 seats, when an A321Neo with more seats has only 40 min turn-around time?

AFAIK turnaround time is one of those stats that is fixed between all aircraft in the same family. In this case the 757-200 has the same turnaround time as the 757-300 (which was known for having a long turn time due to the slow process boarding such a long plane) whilst the A321s turn time is based around the A320 itself presumably.
757 has a bulk cargo hold, while the A321 has containerloaded baggage, therefore it turns faster

From Boeing's document, the limiting factor (critical path) to 757's turnaround time is boarding/deboarding not cargo.
