Title: interpreting passengers amounts

if i plan a route and it says for example:

monday: Ydemand=325
             all available seats= 200
             my available seats=0

does this mean, there still is a demand of 325 seats
or does this mean, there is a total of 325, 200 seats are already available so there are 125 left for you. (or more if you offer lower prices etc.)

It does not mean that "125 is left for you". It means that other airlines are offering 200 seats on the route - but you have no info about how much they actually sell.

But a rough assumption can be made that you can easily fly at least 125-seater plane there, as there's that much people "without a ride".

Keep in mind that all demand numbers are only estimates...

so it means that if I sell my tickets for $5 (which i wouldn't but it's just an example) and i have a good image etc. I could almost get all 325 passengers?

Yes.  ;D You could probably get all with 100 route image and extremely low prices.
