In the real world airlines can convert orders, eg change an order slot from a 737-800 to a 737-900er or from a 767-200 to a 300er etc if the order is changed enough in advance. Obviously their are costs involved. But it's something that would really be helpful to all airlines

This is already possible in the aircraft --> orders screen.
Conditions apply, e.g. you can't change to a new model that has been launched after you've placed the original order.
You have to do it at least 10 months before the delivery and probably some other things I can't think of.

the big thing about changing your order: if you buy a plane with discount (up to 26/36%), you will have to pay very much, also if you change just small things.

I think OP meant upgrading to better model.

707-120 to -320/b/c for example...
