Fifth freedom allows an airline to carry revenue traffic between foreign countries as a part of services connecting the airline's own country. It is the right to carry passengers from one's own country to a second country, and from that country to a third country (and so on).

E.g. in real-life, EK DXB-BKK-SYD-CHC, DXB-MXP-JFK, QF SYD-SIN-LHR, BNE-LAX-JFK etc.

The airline could apply for approval from the countries involved, perhaps only a certain amount of seats on a specific sector for passengers between the cities on that sector only.

Freedoms of air are modelled only after real treaties.

5th freedom is currently only available in EU in AWS and these single exceptions for single routes / single airline realistically cannot be added since there's a really hard time in finding any data for them.

There are other treaties that are not yet modelled (besides of EU) and those will be added at some point...

Excuse me, how to schedule a fifth freedom flight in EU in AWS?

Just quoted the manual bit quickly. But yes since routes are always two legs (instead of three) it's 9th freedom. But if 3-leg routes are used then 5th is available in eu.
